Kohlrabi soup

The spring has almost come - at least in our calendar. I thought we could celebrate it with a healthy white-green soup - these colors remind me of the snow flower (it is called "the messenger of spring" here in Hungary). I decided to use kohlrabi - oh, I love to eat it raw as well... :-) Obviously I used my other favorite veggies as well such as the leek and celeriac. Here is the recipe to make one of my favorite soups.
Ingredients:
- 2 kohlrabis
- 3 blades of celeriac
- 1/2 blead of leek
- 1/2 celeriac (root)
- 1 tbsp olive oil
- 200 ml heavy cream
- 3-4 stock-cube
- spices: white pepper, garlic powder, thyme, bear's onion, chive; a bunch of fresh parsley, half bunch of celeriac's leaves
Directions.Prepare all the veggies: after peeling and washing, cut them into little cubes, circles etc. :-) Steam the leek on oil about five minutes in a bigger pot. Pour into it about 1.5 litre of hot water. Throw the veggies and the stock-cubes into the water as well. Put the dried spices into a tea-ball, mix them well and put it into the soup. When the veggies are almost cooked, season your soup with the fresh spices (parsley, celeriac leaves) - cook it a bit more. Mix the heavy cream into the soup when it is almost ready. After that wait until it starts to boil again. Enjoy your meal! :-)
