Today night I will be working at night shift. Sincerely, it is not my favorite shift so I have to jazz it up with some colorful dish. I really love the sweetpotato and the beetroot as well - no, I'm not crazy... Only that I have iron-deficiency abcsess. So I was adviced to eat a lot of veggies and meat rich in iron. How can I protest against it? Oh, no way... :-) So I have decided to make a healthy and colorful snack - it can be used as a side as well.


  1. 2 medium-sized sweet potato
  2. 1 small beetroot
  3. 2 cloves of garlic
  4. 3 tbsp extra virgin olive oil
  5. 1 tbsp balsamic vinegar
  6. 1-2tsp salt
  7. spices: dried thyme, rosemary, basil and white pepper and some fresh lemon-flavored thyme

How to prepare. Preheat the oven to 200 °C. Peel the vegetables and wash them carefully. Cut them into long, thin pieces. In a bowl mix the olive oil, the vinegar with all the dried spices and sprinkle it with the salt. Put the veggies into this mixture and mix them together. It is important to rub all their sides with the oil. Finally put them in a pan covered with baking sheet. Sprinkle it with some fresh thyme. Bake them until 25-30 minutes. Oh... What a smell it has! :-)
